# Ingredientes:

→ Cherry Layer

01 - 1 cup fresh or frozen cherries, pitted and halved
02 - 2 tablespoons granulated sugar
03 - 1 tablespoon lemon juice
04 - 1 teaspoon cornstarch

→ Almond Cake

05 - 2 cups finely ground blanched almonds (almond flour)
06 - 1 cup granulated sugar
07 - Zest of 1 lemon
08 - 4 large eggs
09 - 1/2 teaspoon almond extract
10 - 1/4 teaspoon fine sea salt

→ Topping

11 - 2 tablespoons powdered sugar

# Instrucciones:

01 - Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
02 - Combine cherries, granulated sugar, lemon juice, and cornstarch in a small saucepan. Cook over medium heat for 4 to 5 minutes, stirring frequently, until cherries soften and mixture is jam-like. Let cool.
03 - In a large mixing bowl, blend almond flour, granulated sugar, lemon zest, and salt evenly.
04 - Lightly beat eggs with almond extract in a separate bowl. Combine wet and dry mixtures, stirring until homogenous.
05 - Spread half of the batter in prepared pan. Distribute cherry mixture evenly on top. Add remaining batter, gently smoothing the surface.
06 - Bake for 30 to 35 minutes, until the surface is golden and fully set. Allow to cool completely in the pan.
07 - Dust with powdered sugar. Slice into bars and serve.
